               Honey is derived from the nectar of flowers collected by the honeybees. Besides acting as an excellent ingredient in cooking, the healing properties of honey also make its greater use in medicines also. Honey in India is found in different forms. Common forms of honey are comb honey, cream honey, liquid honey etc.

Honey has a long history of human consumption, and is used in various foods and beverages as a sweetener and flavoring. It also has a role in religion and symbolism. Flavors of honey vary based on the nectar source, and various types and grades of honey are available. It is also used in various medicinal traditions to treat ailments.

     In the hive, the bees use their "honey stomachs" to ingest and regurgitate the nectar a number of times until it is partially digested. synthesized by the bees and digestive acids hydrolyze sucrose to give the same mixture of glucose and fructose. The bees work together as a group with the regurgitation and digestion until the product reaches a desired quality. It is then stored in honeycomb cells.

                 After the final regurgitation, the honeycomb is left unsealed. However, the nectar is still high in both water content and natural yeasts, which, unchecked, would cause the sugars in the nectar to ferment. The process continues as bees inside the hive fan their wings, creating a strong draft across the honeycomb, which enhances evaporation of much of the water from the nectar. This reduction in water content raises the sugar concentration and prevents fermentation. Ripe honey, as removed from the hive by a beekeeper, has a long shelf life, and will not ferment if properly sealed.Another source of honey is from a number of wasp species, such as the wasps Brachygastra lecheguana and Brachygastra mellifica, which are found in South and Central America. These species are known to feed on nectar and produce honey.

Honey Filtration

According to USDA Grading Standards for extracted honey, filtered honey is honey that has been filtered to the extent that all or most of the fine particles, pollen grains, air bubbles, or other materials normally found in suspension, have been removed.

Honey that is filtered by packers is filtered for various reasons:

  1. Many consumers prefer honey that is liquid and stays liquid for a long time.
    • All honey crystallizes eventually. Suspended particles and fine air bubbles in honey contribute to faster crystallization. Filtering helps delay crystallization, helping the honey to remain liquid for a much longer period than unfiltered honey.
  2. Many consumers prefer honey to be clear and brilliantly transparent.
    • The presence of fine, suspended material (pollen grains, wax, etc.) and air bubbles results in a cloudy appearance that can detract from the appearance. Filtering is done to give a clear brilliant product desired by consumers. For the filtered style of honey, USDA Grading Standards for Extracted Honey give higher grades for honey that has good clarity.
    • Honey is filtered to remove extraneous solids that remain after the initial raw processing by the beekeeper.

Various filtration methods are used by the food industry throughout the world. Ultrafiltration, a specific kind of filtration used in the food industry, should not be confused with other filtration methods generally used in the honey industry.

Uses of Honey :-

  • Burns. Applying honey preparations directly to burns seems to improve healing.
  • Cough. Taking a small amount of honey at bedtime appears to reduce the number of coughing spells in children age 2 and older. Honey appears to be at least as effective as the cough suppress antdextro methorphan in typical over-the-counter doses. Some researchers think the sweet taste of honey triggers salivation. This, in turn, promotes secretion of mucus, which wets the airway and calms the cough.
  • Diabetes. Some evidence suggests that taking honey daily results in small decreases in blood sugar, cholesterol levels, and weight in people with diabetes.
  • Sore mouth due to radiation treatment (mucositis). Results from clinical studies suggest that honey reduces the risk of developing mouth sores from radiation treatment. Other research shows that taking 20 mL of honey or applying honey gauze (HoneySoft) reduces the seriousness of mouth sores, painful swallowing, and weight loss associated with radiation therapy for head and neck cancers.
  • Wound healing. Applying honey preparations directly to wounds or using dressings containing honey seems to improve healing. Several small studies describe the use of honey or honey-soaked dressings for various types of wounds, including wounds after surgery, chronic leg ulcers, abscesses, burns, abrasions, cuts, and places where skin was taken for grafting. Honey seems to reduce odors and pus, help clean the wound, reduce infection, reduce pain, and decrease time to healing. In some reports, wounds healed with honey after other treatments failed to work.
